Preservation and Varieties
Honey is mostly natural sugars (fructose and glucose) and under 20% water. Because bees fan the nectar to evaporate excess moisture and the honey has a highly acidic pH, bacteria simply can't survive in it. This means it has an infinite shelf life—researchers have even tasted 3,000-year-old honey found in Egyptian tombs that was still perfectly edible!

Depending on the flowers the bees visit and how the honey is processed, there are over 300 varieties in the U.S. alone. Here are the main styles you’ll come across:
Raw: Unfiltered and unheated, keeping all the natural pollen and healthy stuff intact.
Monofloral: Made from one specific flower, such as vibrant orange blossom or Manuka.
Polyfloral: A beautiful blend of nectars from a variety of different flowers.
Creamed: Specially stirred to create a perfectly thick, spreadable texture.
